Easy, gluten free, dairy free blini recipe. Full of protein and wonderful anti-inflammatory omega 3 fats to support gut and brain function. Perfect party or Saturday night snack!

Low carb, high protein & healthy fats keeping hunger locked up and you dancing longer!

Pancakes

  • 175g Buckwheat flour

  • 3 tsp baking powder

  • 3 eggs

  • 2-4 egg whites (carton)

  • Make it vegan 1 tbsp ground golden flax

  • Water (150-200ml)

  • Pinch pink salt

  • Twist black pepper 

  • Zest & juice 1 lemon 

  • Tbsp chopped coriander or parsley 

  • Coconut oil (for frying)

    Topping

  • 1 packet hot smoked salmon

  • Or grated smoked tofu

  • 1-2 tbsp coconut yoghurt 

  • 1/2 lemon & zest 

  • Fresh parsley/coriander for garnish 

Offer up these beauties for happy healthy guests!

Method

  • Add flour to a bowl

  • Whisk in eggs & whites

  • Add water until desired consistency (not too thin)

  • Mix in all other pancake ingredients 

  • Heat a tsp coconut oil in frying pan

  • Use a small spoon to ladle batter 

  • Fry in coconut oil in small batches

  • Leave to cool

  • Mix topping ingredients 

  • Spoon topping onto pancakes

  • Sprinkle with herbs & enjoy!

  • Make ahead and freeze
