Eat Real Bread

I was raised in Cornwall by my single parent Mother of three who was well known in the village for selling her freshly baked bread:

🍞 Oatmeal soda bread

🍞 Overnight fermented bread

🍞 Granary rolls

🍞 Mini loaves

🍞 White tin

🍞 Ice bun round

🍞 Fruit bread

🍞 Granary loaf

🍞 Mixed rye

As a child I helped with and observed closely the preparations of these tasty baked goods.

Around 30 years later I became host to a severe parasitic nematode infection in my intestines. To say that this event in my life was stressful would be an understatement. Coincidentally, I was studying nutritional therapy at the time and decided to remove gluten from my diet due to its potentially negative impact on the gut associated immune system. Also… a period of extreme stress may trigger autoimmunity to gluten.

Nowadays, I may dabble in wholegrain gluten containing products occasionally, but along the way I have developed recipes and nutritional guidance to support a gluten free diet. I may have navigated away from the list above and that is ok because it is possible to enjoy food following or during a period of illness. My recipes contain certain sources of fibre that boost the human gut microbiome of friendly bacteria, which are 75-80% of your immunity. And a source of protein needed to make antibodies that fight infection; hormones that govern mood, sleep, energy & digestion and of course for muscle growth.
